Ravioli with Tomatoes and Rocket is healthy and easy to make option for lunch or dinner; enjoy it with glass of wine or juice.
Ravioli: 250g (package of fresh or frozen ravioli)
Tomatoes: 100-150g
Rocket/Basil: 10g
Parmesan: 20g
Spices: salt and paper for frying tomatoes
Olive Oil: for frying tomatoes
Heat the olive oil in a small saucepan over medium heat. Cut tomatoes in half and add the to the pan; sauté for 2-3 minutes.
Bring a large pot of salted water to a boil.
Add the ravioli to the boiling water and cook according to the package instructions, usually about 3-5 minutes for fresh ravioli or 8-10 minutes for frozen ravioli.
Drain the cooked ravioli and add them to the saucepan with the tomato sauce. Gently toss the ravioli in the sauce to coat.
Serve the ravioli hot, garnished with fresh rocket / basil and grated parmesan cheese.
