Quick and Easy Pasta Salad is a combination of colorful vegetables and cooked pasta creates a flavorful and refreshing salad that can be ready in no time.
Pasta: 150g of your choice
Cherry Tomatoes: 50g halved
Cucumber: 50g diced/sliced
Black Olives: 25g sliced
Mozzarella Balls: 50g
Olive Oil: 2 tablespoons
Parmesan Cheese: 5-10g
Spices: salt and pepper
Cook pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down.
In a large mixing bowl add the cooled pasta and combine the cherry tomatoes, cucumber, black olives, mozzarella balls and pasta.
Toss the ingredients together, add olive oil and spices.
Serve the Quick and Easy Pasta Salad immediately or refrigerate it for at least 30 minutes to allow the flavors to meld together.
Add parmesan cheese when serving.
Optional: whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
Try different vegetables like diced bell pepper, thinly sliced red onion or chopped fresh parsley.
Replace mozzarella cheese with feta.
